Method
- 01
Cut the cold butter into cubes and quickly work it into the flour, sugar, and salt by hand or in a food processor until it forms coarse crumbs. Add ice water, bring the dough together (do not overknead), divide into 2 portions (one slightly larger), wrap in plastic wrap, and refrigerate for 30–40 minutes.
- 02
Peel the apples, slice them thinly, and mix with sugar, cinnamon, lemon juice, and cornstarch. (Optionally, sauté them in a pan with 20g of butter for 3–4 minutes to evaporate excess liquid and develop the flavors).
- 03
Roll out the larger piece of dough, line a baking dish (22–24 cm) with it, bringing it up the sides. Pour/arrange the prepared apple filling evenly inside.
- 04
Roll out the second portion of dough, cut it into equal strips, and weave them into a lattice pattern over the apples. Fold and crimp the edges, and brush the top with beaten egg yolk.

- 05
Bake in a preheated oven at 180°C for 45–50 minutes, until the crust is golden brown and the filling is bubbling. Be sure to cool completely before slicing so the filling sets properly.
