Classic Beef Burger
A straightforward homemade beef burger with a juicy skillet-seared patty, soft toasted bun, crisp lettuce, tomato, onion, and a simple burger sauce made from familiar condiments.
Method

Prepare the toppings before cooking: slice the tomatoes, onion, and pickles, and separate the lettuce leaves. Mix 80 g mayonnaise, 40 g ketchup, and 20 g mustard to make a quick burger sauce.

Divide 650 g ground beef into 4 loose portions and gently shape each into a patty slightly wider than the bun. Press a shallow dimple in the center of each patty, then season both sides with 1 teaspoon salt and 1/2 teaspoon black pepper just before cooking.

Heat a large heavy skillet or grill pan over medium-high heat and add 1 tablespoon oil. Cook the patties without pressing them, flipping once or twice, until browned outside and the center reaches 71°C for ground beef safety.

Transfer the patties to a plate to rest briefly. Toast the cut sides of the buns in the same pan until lightly golden so they hold up better to the sauce and juices.

Spread sauce on the bun bases and tops. Build each burger with lettuce, a beef patty, tomato, onion, and pickles, then close the buns and serve immediately with extra ketchup or mustard if desired.
