Classic Club Sandwich
A tall cafe-style sandwich of toasted bread layered with sliced chicken or turkey, crisp bacon, lettuce, tomato, and mayonnaise, then cut into stacked triangles.

Cook the bacon in a skillet over medium heat, turning occasionally, until browned and crisp. Transfer to paper towels so it stays crisp while you prepare the rest.

Slice the tomatoes thinly and season them with the salt and black pepper. Wash and thoroughly dry the lettuce, and slice the cooked chicken breast into thin, even pieces if it is not already sliced.

Toast all the bread until lightly golden and firm. For each sandwich, spread mayonnaise on one side of two toast slices and on both sides of the middle toast slice.

Build each sandwich in layers: place one mayo-side-up toast slice on the board, add lettuce, tomato, and chicken breast, then add the middle toast slice. Top with bacon and more lettuce, then close with the final toast slice, mayo-side down.

Press each sandwich gently to steady the layers. Secure with wooden picks, then cut diagonally into quarters so the stacked triangular club sandwich shape is visible. Serve right away while the toast and bacon are crisp.
