Cut the chicken breast and thigh fillets into small cubes. Add the spices, grated Parmesan, and a little olive oil. Mix well so that all the pieces are evenly coated.

Melt the butter in a pan over low heat and add the spices. Cook for about 1 minute, then pour in the evaporated milk and add the Parmesan and cream cheese. Stir until the sauce becomes smooth and creamy.

Line a baking sheet with parchment paper and spread the marinated chicken in a single layer, ensuring the pieces do not overlap. Lightly coat with cooking spray and bake in a preheated oven at 200°C for 20–22 minutes, until the chicken is nicely browned and crispy.

As soon as you remove the chicken from the oven while it is still hot, sprinkle with grated Parmesan and parsley. Toss well so the cheese sticks to the chicken and is evenly distributed.

Arrange chopped lettuce, onions, and tomatoes on a tortilla. Top with the chicken pieces and drizzle with the sauce. Roll up the tortilla and serve.
