Tuna Melt Sandwich
A hot cafe-style sandwich with creamy canned tuna salad, crisp griddled bread, and melted cheese.
Method

Drain the canned tuna very well, pressing out excess liquid so the sandwich does not become soggy. Flake it into a bowl with a fork.

Mix the tuna with 4 tablespoons mayonnaise, celery, red onion, 2 chopped pickled cucumbers, 1 tablespoon lemon juice, 2 teaspoons mustard, salt, and 1/2 teaspoon black pepper. Taste and adjust the seasoning; the salad should be creamy but not wet.

Lay out the 8 bread slices. Butter the outside faces with 40 g softened butter, then build 4 sandwiches with 160 g cheese against the bread and tuna salad spread evenly in the center.

Heat a large skillet or griddle over medium-low heat. Cook the sandwiches in batches, pressing lightly with a spatula, until the bottom bread is golden and crisp.

Flip carefully and cook the second side until the bread is toasted and the cheese is fully melted. Rest for 1 minute, then cut and serve hot.
