Grilled Cheese Sandwich
A simple comfort sandwich with butter-crisped bread and a hot melted Gouda and Cheddar center, cooked slowly in a skillet until golden.
Method

Mix 120 g grated Gouda and 60 g grated Cheddar. Lay out the 4 bread slices and spread the 35 g softened butter thinly over one side of each slice, all the way to the edges.

Heat a heavy skillet over medium-low heat. Place 2 bread slices in the pan, buttered side down, divide the cheese over them, and top with the remaining bread slices, buttered side up. Cover and cook until the bottom bread is deep golden and the cheese starts to soften.

Flip the sandwiches carefully, press them gently with a spatula, and cook uncovered until the second side is golden and crisp and the cheese is fully melted. Lower the heat if the bread browns before the cheese melts.
