Bratwurst with Sauerkraut

    Drain the sauerkraut well, rinsing it briefly only if it tastes too salty or harsh. Slice the onion, prepare the apple, and lightly crush the caraway seeds so the sauerkraut is ready to cook without pausing.

    Warm 1 tablespoon sunflower oil in a wide pan or pot over medium heat. Cook the onion until soft and lightly golden, then stir in the apple, 700 g sauerkraut, 1 teaspoon caraway, bay leaf, 1 teaspoon sugar, black pepper, 150 ml apple juice, and 150 ml vegetable stock.

    Bring the sauerkraut to a gentle simmer, cover, and cook until the cabbage is hot, mellow, and juicy but not soupy. Stir once or twice and add a splash of water if the pan gets dry before the sauerkraut softens.

    While the sauerkraut simmers, heat the remaining 1 tablespoon oil in a skillet or grill pan. Brown the sausages on all sides over medium heat until deeply colored and cooked through; adjust the time if your sausages are raw, thick, or already cooked.

    Remove the bay leaf from the sauerkraut. Taste and season cautiously with salt and more black pepper, then serve the browned sausages on or beside the sauerkraut with mustard and crusty bread.
